Wooden Varieties
Knife blocks come in many varieties. The most common is bamboo followed by hardwood.

Bamboo
Bamboo is acually a grass. It is actually harder than hardwood because of it's dense structure. The round outer portion of the bamboo is used for construction since it is the strongest. Bamboo grows a lot faster than hardwood, since it's a grass, and can be repleplenished faster (saving you money). Bamboo is light in color.

Hardwood
Oak, maple, and cherry are popular choices. It doesn't really matter what kind of wood you choose (as long as it is a hardwood). You should stay away from Beech and Pine because they will crack and warp with age. The most important consideration is that it matches your kitchen (especially cupboards). To match light decor choose oak or maple. To match dark decor choose cherry or walnut. Remember that how a wood is finished can also make a big difference on the resulting color.
